About Lunches and weekends

Seems like my Saturday is going quite swell. For starters I had a full fledged lunch and woke up early.(Huh! now how did that happen?). My ever so charming (and hungry) husband got me a surprise today. Well, not roses, duh! Mutton, he got me mutton, alright!(Goat meat for the non-familiar. Vegans and Vegetarians please don't judge me now). Mutton can be an acquired taste for a few as it does have a peculiar after taste and smell, but, if you are from the North-eastern part of India, mutton is highly thought of. So highly, that it is served in weddings and funerals alike. Ta da :)


Now, how did my plate look today ? well, here it is:




Now to the Recipe for Mutton Kosha:

Ingredients:

1.  Mutton or goat meat

2.  Mustard oil 

3.  Onion sliced

4.  Ginger (made into a paste)

5.  Garlic (made into a paste)

6.  Tomato

7.  Green chilies (to taste)

8.  Potatoes

9.  Plain yogurt

10. Black pepper powder

10. Garam Masala Powder

11. Whole dry red chilies (to taste)

12. Cinnamon

13. Cloves

14. Turmeric Powder

15. Red Chili Powder (to taste)

16. Sugar

17. Salt (to taste)

18. Mustard or Vegetable oil (If you prefer Olive oil, make sure you add a teaspoonful of mustard seeds)

Method:


Marinate the mutton over night in the yogurt, a teaspoon of mustard oil(Optional) and 1/2 teaspoon of turmeric powder . Make sure that the mutton is cut in chunky pieces and has a nice layer of fat . Slice the onion and chop up the tomatoes and then peel and cut the potatoes in halves . Heat a tablespoon of mustard oil(or veg/olive oil) in pressure cooker and then add in the sliced onions . Add some sugar and fry the onions till golden brown. Also add in the whole garam masala(Num: 11 to 15 in the ingredients list) along with Red chilli and pepper powder.

When the onions have browned nicely add in the green chilies, ginger,and garlic paste and cook for 4-5 mins . Now set this mixture aside to cool and grind this into a paste and add it, for a smooth more restaurant like taste but you can just continue to cook without removing the fried onions . Next add in more oil and fry the potato halves for a minute . Next we will add in the marinated mutton and mix in . Once the fried onion mixture has cooled down, make a fine paste and also make a puree of the tomatoes . Now Add these two pastes to the mutton along with the garam masala powder . Then cook well for 10-15 mins on medium high heat . Now add water and pressure cook the whole thing for 2-3 whistles or 10 mins on high flame . Let the steam cool down and check if the mutton has left its oily layer on top.(Sign of tasty mutton Kosha :) ). Now cook the mutton without the lid of the cooker for about 15 minutes or till the curry is thick(waterless).


Voila, your mutton Kosha is ready to be served!
